Thekua is a traditional sweet snack from the state of Jharkhand in eastern India. Made with wheat flour, jaggery, and coconut, Thekua is a delicious and healthy treat that is perfect for satisfying your sweet tooth. Ingredients:
2 cups wheat flour
1 cup jaggery (grated)
1/4 cup coconut (grated)
1/4 cup ghee (clarified butter)
1/2 teaspoon cardamom powder
1/2 teaspoon fennel seeds
Water (as needed)
Ghee / Oil (for frying)
Instructions:
In a large bowl, combine the wheat flour, grated jaggery, grated coconut, cardamom powder, and fennel seeds. Mix well until all the ingredients are evenly distributed.
Add the ghee to the bowl and mix it with your hands until the mixture becomes crumbly.
Slowly add water to the mixture, a little at a time, and knead it into a stiff dough.
Cover the dough and let it rest for about 10-15 minutes.
After the dough has rested, take a small portion of it and roll it into a ball. Flatten the ball slightly and use a cookie cutter or a knife to cut it into a round shape.
Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully add the Thekuas to the pan and fry them until they are golden brown on both sides.
Remove the fried Thekuas from the pan and place them on a paper towel to absorb any excess oil.
Allow the Thekuas to cool down completely before storing them in an airtight container.
