Rugda - Indigineous Mashroom of Jharkhand

Rugda is a spicy gravy made with mushrooms and is a popular dish from the state of Jharkhand in eastern India. Ingredients:

1 cup mushrooms, cleaned and chopped

2 onions, chopped

2 tomatoes, chopped

1 tablespoon ginger-garlic paste

1 teaspoon cumin seeds

1 teaspoon coriander powder

1 teaspoon turmeric powder

1 teaspoon red chili powder

Salt to taste

2 tablespoons oil

Water as needed

Fresh coriander leaves for garnish

 

Instructions:

Heat 2 tablespoons of oil in a pan over medium heat.

Add cumin seeds and let them splutter.

Add chopped onions and sauté until they turn golden brown.

Add ginger-garlic paste and sauté for a minute.

Add chopped tomatoes and cook until they become soft and mushy.

Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for 2-3 minutes.

Add chopped mushrooms and mix well. Cook for 5-6 minutes until the mushrooms are cooked and the gravy is thickened.

Add water as needed to adjust the consistency of the gravy.

Let the Rugda simmer for 2-3 minutes on low heat.

 

Garnish with fresh coriander leaves and serve hot with some steamed rice or roti.
