Aloo Matar

  

Aloo Matar Ki Sabji is a classic dish from the state of Jharkhand, located in eastern India. This simple and flavorful recipe is made with potatoes and green peas cooked in a tomato-based gravy, spiced with a blend of aromatic spices. Ingredients:

3 medium-sized potatoes, peeled and diced

1 cup green peas, fresh or frozen

1 onion, finely chopped

2 tomatoes, finely chopped

2-3 garlic cloves, minced

1 tsp cumin seeds

1 tsp coriander powder

1/2 tsp turmeric powder

1/2 tsp red chili powder

Salt to taste

2 tbsp vegetable oil

Fresh coriander leaves for garnishing

 

Instructions:

In a pan, heat vegetable oil over medium heat. Add cumin seeds and let them splutter.

Add chopped onions and sauté until they turn translucent. Add minced garlic and sauté for 1-2 minutes until it turns golden brown. Add chopped tomatoes and cook until they become soft and mushy. Add coriander powder, turmeric powder, red chili powder, and salt. Mix well. Add diced potatoes and half green peas to the pan. Remaining part of the green peas shall be blended in a blender and put in the pan for a thick gravy and Mix well. Add 1/2 cup water and stir everything together. Cover the pan with a lid and let the vegetables cook for 10-12 minutes until they become tender. Once the vegetables are cooked, remove the lid and cook for another 2-3 minutes until the gravy thickens. Garnish with fresh coriander leaves and serve hot with roti, paratha, or rice.

 

Tips:

If using frozen peas, soak them in hot water for 10 minutes before adding them to the pan.

You can add some garam masala powder or kasuri methi (dried fenugreek leaves) to enhance the flavor of the dish.

Adjust the spice level according to your taste.
