Anarsa

Ingredients:

2 cups of rice flour

1 cup of jaggery

1/4 cup of sesame seeds

Oil for frying

Water as needed

 

Instructions:

Wash the rice thoroughly and soak it in water for at least 6 hours or overnight.

Drain the water from the rice and spread it out on a clean cloth to dry completely. Once the rice is dry, grind it to a fine powder.

In a separate pan, melt the jaggery with a little water until it forms a thick syrup. Once the jaggery syrup is ready, remove it from heat and allow it to cool slightly.

Add the jaggery syrup to the rice flour and mix well. Knead the mixture to form a smooth dough, adding water as needed.

Cover the dough and let it rest for at least 2 hours.

After 2 hours, heat the oil in a deep frying pan over medium heat.

Roll the dough into small balls and flatten them slightly. Coat each ball with sesame seeds, pressing them gently so that they stick to the dough.

Fry the anarsa in hot oil until they turn golden brown on both sides.

Drain the anarsa on a paper towel to remove excess oil.

Allow the anarsa to cool before serving.
