Litti Chokha

  

Litti Chokha is a traditional dish from Bihar and Jharkhand, made with roasted wheat balls filled with spiced gram flour and served with a spicy side dish made of mashed potatoes, brinjal, tomatoes, and spices. This dish is a popular street food and a favorite among the locals in Jharkhand.

 




Ingredients:

For Litti:

2 cups wheat flour

1/2 cup gram flour

1/2 cup ghee

1/2 cup water

1 tsp carom seeds (ajwain)

Salt to taste

1 tsp red chili powder

1 tsp coriander powder

1 tsp cumin powder

1 tsp garam masala powder

1 tbsp grated ginger

2-3 garlic cloves, minced

1 tbsp lemon juice

 

For Chokha:

2 medium-sized potatoes, boiled and mashed

1 brinjal, roasted and mashed

2 tomatoes, finely chopped

1 onion, finely chopped

2-3 green chilies, finely chopped

1 tsp mustard oil

Salt to taste

1 tsp cumin powder

1 tsp coriander powder

1 tsp red chili powder

Fresh coriander leaves for garnishing

 

Instructions:

For Litti:

In a bowl, mix together wheat flour, ghee, carom seeds, salt, and water to make a dough. Cover it with a damp cloth and keep it aside for 30 minutes.

In another bowl, mix together gram flour, red chili powder, coriander powder, cumin powder, garam masala powder, grated ginger, minced garlic, lemon juice, and salt to make a stuffing.

Divide the dough into small balls and flatten them into discs.

Place a tablespoon of stuffing in the center of each disc and fold the sides to make a ball.

Preheat the oven to 200°C.

Place the balls on a baking tray and bake for 20-25 minutes until they become golden brown and crispy.

 

For Chokha:

In a bowl, mix together mashed potatoes, roasted and mashed brinjal, chopped tomatoes, chopped onions, chopped green chilies, mustard oil, salt, cumin powder, coriander powder, and red chili powder.

Mix everything well to make a smooth mixture.

Garnish with fresh coriander leaves and serve with hot Litti.

Tips:

You can also cook Litti on a tawa (griddle) or over a gas flame.

You can also add some chopped garlic, ginger, and green chilies to the Chokha for extra flavor.

Traditionally, Litti is served with ghee.
